Colorful, hot veggies


When temperatures drop below zero degrees at night in winter and it isn't so warm during the day as well, cold meals are not what I'm looking for. As in the spring and summer I love raw vegetables and various types of salads, in winter I need hot, colorful food. Such a satisfying meal warms up the body and keeps you warm for many hours. One of my favorite winter dishes is a hot salad made of broccoli and roasted belly peppers with black olives and sheep's feta cheese. It is incredibly delicious and so easy to prepare. INGREDIENTS: 2 small broccoli 2 belly peppers (red and yellow) 1 pack of black seedless olives 1 pack of sheep's feta cheese SAUCE: 4 tablespoons of olive oil 4 tablespoons of water 1 teaspoon of honey 1/2 teaspoon Dijon mustard 1 tablespoon of a good balsamic vinegar 1 teaspoon of dried tarragon a pinch of ground chilli pepper I steam broccoli for about 15 minutes. The belly pepper cut into strips, placed on a baking sheet and sprinkled with olive oil, I put in the oven preheated to 200 ° C for about 15 minutes. When the broccoli is ready, I divide them into small pieces, mix it with roasted belly peppers, olives and diced feta cheese. I put all the sauce ingredients into a little jar. Close the jar and shake it vigorously several times until the ingredients combine into a smooth sauce. Add sauce to the the veggies. Sometimes Iadd also some roasted sunflower seeds. Ready :)
